Thank you GnomeBoy and Jim! How do I use Hit Dice. Is this how you randomly generate a monster's hit points?

How do you read a monsters statistics? I am looking at Chapter Nine in the DCC RPG Core Rulebook. Let's look at Chimera as an example. There are three items in the entry that I do not understand.
