I am in the camp of not leveling up during a funnel. And I've run a couple of long ones for the funnel as well - Perils of the Sunken City and Sailors. I don't even track XP - survivors get to level.

For my online game everyone has the books. So it has never been an issue there.
My home group played DCC for about 2 or 3 months. In that case the judge had the book and I had two copies of the book - one for passing around the table.

I would go with the S&W version. It will distill the relevant stats down to what is needed vs. having to filter through a Pathfinder stat block pulling out what you need and disregarding the rest.
