Just change the DC of the lock/door/portal/whatever. If it was a DC 10 Strength check without a crowbar, make it a DC 5 Strength with a crowbar check instead.

I'm kind of stingy I guess? I've always tied it to finishing "big things" or taking great risks. If I had to put an average on it, players regen 1 point of luck every 2-3 levels.

Give the players ample opportunity to retreat killer encounters and a few hints and you should never have to fudge again.

If your players are comfortable doing it, it might be worth letting them play a couple of 1st level characters ... Also "redshirts." Lots and lots of "redshirts."

It might be worth printing off Jeremy Deram's DCC RPG reference booklet (free in pdf here) or you can spring for the really nice POD version from lulu.com for a pretty low price.
