Amen! Dwarf Fortress is something else. Its so many things I cannot communicate properly. I actually just fell into a DF hole yesterday. Fired it up for the first time in over a year.

Nethack is, of course, full of flavor.

You should add some Bathory to that playlist. :] Nordland I and II, Hammerheart etc.

Also some Summoning such as Dol Guldur and Minas Morgul.

In the final encounter on top of the summit... Do all of the beasties around get involved in the action or do just the ones on the top of the summit?

Basically do the PCs have to fight 20+ enemies or less than 5 enemies?
