I always roll in the open.
I am actually thinking of having PCs roll Active Defense against the monster "Attack DC".
So maybe they can burn Luck on Defense rolls.

It really depends on the DM. Some like to add 0 Lvl PCs. From my experience as a player and as a DM, rolling lots of checks usually plays against the PCs. If you're trying to sneak past 2 guards you have to roll twice.
